You guys often ask me for more vegetarian lunch ideas. Well, ask and you shall receive! The lovely folk at popchips asked me to come up with an interesting lunch recipe to serve alongside their ‘popped’ crisps, and what could be more interesting than these BBQ tofu bacon BLT wraps? It’s bacon! Made from tofu!

The people at popchips think lunch should no longer involve a soggy cheese sandwich eaten at your desk – you deserve to enjoy more! No more disappointing lunchboxes – take a few extra minutes to make a really tasty lunch that you’ll look forward to all morning.

These BLT wraps are made with tofu bacon marinated in BBQ sauce – you can choose your favourite sauce to make sure the flavour is just right for you. Mine was spicy, smoky and slightly sweet, and to offset the dark flavour of the sauce, I also added a smear of avocado ‘mayonnaise’ to brighten everything up.

I’ve made tofu bacon before, but last time I made my own marinade rather than using a pre-made BBQ sauce. Either way works really well, it just depends on how much time and energy you have. I definitely think there’s a time and a place for using pre-made sauces, and I’m happy for this to be one of them. Just slice your tofu thinly, dredge it in the sauce, and fry it until it’s nice and crispy on both sides.

Along with the simple avocado ‘mayonnaise’ (which obviously doesn’t taste remotely like mayo, but serves a similar purpose), you’ll need to add the usual lettuce and tomato to your tortillas, and your tofu bacon BLT wraps are done! Easy peasy.

These tofu bacon BLT wraps are great for lunchboxes, and they went perfectly with a packet of barbeque flavour popchips. My husband and I have tried quite a few flavours of popchips over the past couple of weeks, and I think the barbeque ones might be my favourite. They have quite a light flavour, slightly smoky and slightly sweet – the perfect match for the BBQ tofu bacon.

If you’re unfamiliar with popchips, they’re a kind of potato crisp that’s ‘popped’ rather than fried, making them lower in fat and calories than normal crisps (less than 100 cals per bag!). The result is a light, airy texture that still has plenty of crunch. To be honest, I often find ‘healthy’ crisps quite disappointing, but I would genuinely be very happy to choose popchips over a traditional bag of crisps – they definitely satisfy any craving for a bit of crunch, and they have tons of flavour.

Just stick your tofu bacon BLT wrap in your lunchbox with a bag of popchips and a piece of fruit or a biscuit, and you’ve got a meal you’ll be glad to dig into come lunchtime!

BBQ tofu bacon BLT wraps

Ingredients

For the BBQ tofu bacon:

  • 4 tbsp BBQ sauce
  • 2 tbsp water
  • 200 g (~ 7 oz) extra firm tofu
  • 1/2 tbsp oil

For the avocado mayonnaise:

  • Few sprigs fresh coriander (cilantro)
  • 1/2 small spring onion, cut into a few chunks
  • 1 small avocado, peeled
  • 1/2 tbsp extra virgin olive oil
  • 1 – 2 tbsp water

To assemble:

  • 2 large flour tortillas
  • 4 baby gem lettuce leaves
  • 2 tomatoes, sliced

Instructions

  • Add the BBQ sauce to a large dish. You might want to add a small dash of water to thin the sauce a little if it’s particularly thick. Cut the tofu into 6 slices. They should be fairly thin, but if they’re too thin they become quite fragile – I found about 3-4 mm was a good thickness. Add the sliced tofu to the sauce, and make sure it’s well covered. You can leave it to marinate for a while if you like, or just a a couple of minutes if you’re pressed for time.
  • Heat the oil in a frying pan, and add the marinated tofu, scraping off any excess sauce first. Cook over a medium heat for around 5 minutes each side, until crispy.
  • To make the avocado ‘mayonnaise’, add a few sprigs of coriander (cilantro) and about 1/2 a small spring onion to a mini food processor, and blitz until chopped. Add the avocado and olive oil, and blitz again until fairly smooth. You can add a dash of water to thin the mayo out a little if desired.
  • To assemble, spread the avocado ‘mayo’ onto two large flour tortillas, and top with the BBQ tofu bacon, baby gem lettuce, and sliced tomatoes. Roll tightly, and cut in half.

Notes

If you’re serving your tofu bacon BLT wraps straight away, you can leave the tofu bacon warm. Or, if you’re putting them into a lunchbox, it’s best to allow the tofu bacon to cool fully before assembling your wraps.

  2. I’ve never heard of Tofu bacon? I think this could be done with turkey bacon or regular bacon if you are not a vegetarian?
    I have to say your lunch box looks very tasty and much better than the usual food I take to work4 stars
