Hellooo, new favourite sandwich! Well, maybe it’s a tie with my halloumi and sun-dried tomato sandwich, which I still think is bloomin’ incredible – but, these green goddess sandwiches are definitely up there.
So what on earth does ‘green goddess’ mean? Honestly… I have no idea. I don’t know where the name originated (please enlighten me if you know!), but I’ve heard the term used in various contexts, like green goddess dressing, for example. It seems to just be a term that can refer to anything that’s super green, creamy, luxurious… and these green goddess sandwiches are all three, so let’s go with it.
Start with a couple of thick slices of fresh bread. Go for a wholemeal bread if you prefer, but this time I plumped for a nice white loaf. I can’t resist it.
Then you smear on a creamy avocado mixture, with fresh basil and a squeeze of lemon juice. Just throw these three ingredients in a mini food processor (or mash it all up with a fork if you don’t have one), and off you go. I left mine slightly chunky, but you can keep blitzing until it’s totally smooth if you prefer.
The result is pretty amazing. The avocado spread totally brings the sandwich to life – the lemon makes it slightly tangy and a lovely contrast to the luxurious avocado, and the basil adds heaps of flavour. Along with a bit of crunch from the cucumber, the extra creamy mozzarella, and some soft white bread with a chewy crust, it really is delicious.
If you want your sandwich to be vegan, by the way, you can skip the mozzarella – but personally I think it really works.
Sandwiches are definitely underrated! I often think they’re a bit boring (hence their rare appearance here on the blog), but when I find one I like, I really like them, especially with a bag of crisps on the side.
A lot of people these days seem to think that carbs are inherently bad – and although I like to play around with low-carb recipes every now and then, I definitely think that carbs have a place in a healthy diet. It’s all about variety, folks! Bread in particular provides protein, fibre, calcium, iron and a variety of vitamins… so you can indeed have carbs before Marbs. Hallelujah! - 1/2 avocado
- Small handful fresh basil
- 1 tbsp freshly squeezed lemon juice
- Black pepper
- 4 slices fresh bread
- Small handful fresh spinach
- 1 inch of cucumber, thinly sliced
- 75 g fresh mozzarella, sliced (optional)
Add the avocado, basil and lemon juice to a mini food processor, along with some salt and pepper. Blitz until it has reached your desired consistency.
Spread the avocado mixture on two of the slices of bread. Top with fresh spinach, sliced cucumber, and fresh mozzarella. Finish with the other two slices of bread, and serve.
